Coconut rice is one of our favorite dishes- creamy, fluffy, and slightly sweet! We make it by cooking jasmine rice in creamy coconut milk to soak up tons of rich flavor and vitamins! Fresh cooked shrimp takes this meal to the next level and adds an amazing supply of selenium, vitamin B12, and plenty of other nutrients. To top this meal off, we add white onion, bell peppers, mango, and spices.
